If A.J. didn't have work to do, I think she'd make work for herself.
She of course has her job as a farmhand and applebucker at the Acres. I work as a farmhand there too when I'm around. She hasn't gotten a job in the human world, though, simply because most of the environs I occupy aren't conducive to the sort of labor she's good at. She's always helping me with planting and weeding and watering and other gardening tasks like that, though. It's not for pay, but she does do work in the human world.
Did I understand the substance of your question correctly, Sour Soul? In talking about your own life with Pinkamena you make good points about how the nature of our darlings can get in the way of finding employment in the human world.
