I'm not particularly religious, however I've never asked Luna about this before, so I'm glad that you brought it up. As it turns out, ponies in my... err... 'headspace' (for want of a better term) don't really have a concept of religion, so it took a bit of explaining for her to understand what I meant.
The best answer I can give is this - Luna doesn't have any spiritual beliefs about how the universe came into being. She focuses on the present and future a lot, so it's not really the sort of thing she considers important. However, some of her beliefs about the future could be considered spiritual. Basically, she believes that life is a cycle of refinement where good things will be retained and bad things will be gradually witted away. Although the passage of time will therefore ultimately lead to a utopia, it's up to us to speed up that process so that we might see it. Hopefully that answers your question.
